A mouth-watering meal in a bowl
Yield: Makes 6 bowls

1 | tablespoon | vegetable or canola oil | |

1 | large onion, chopped | ||

3 | cloves | garlic, minced | |
|
|||
1 1/2 | teaspoons | dried thyme | |
|
|||
3 | cans | (15-oz.) black beans | |
|
|||
1 | can | (28-oz.) tomatoes, diced with juice | |
|
|||
1 | can | (14 1/2-oz.) sodium-reduced chicken broth | |
|
|||
1 1/2 | teaspoons | ground cumin | |
|
|||
Salt and Pepper for taste | |||

Topping: Sour Cream | |||
|
Heat vegetable or canola oil in pot on medium-high heat. Add onion, garlic and dried thyme; cook 3-4 minutes. Add beans, tomatos, chicken broth and ground cumin. Boil on high heat; reduce to low and simmer 12-15 minutes. Puree in 3 batches in food processor fitted with metal blades. If mixture is too thick, thin with chicken broth. Taste and add salt and pepper if needed. Ladle into 6 bowls and top with dollop of sour cream. Pass the hot sauce.
