3/4 | cup | yellow cornmeal | |

1/4 | cup | granulated sugar | |

2 | teaspoons | baking powder | |

1/4 | teaspoon | salt | |
|
|||
1 | cup | milk | |
|
|||
1/4 | cup | vegetable oil | |
|
|||
1 | egg, beaten | ||

Heat oven to 400 degrees F
Spray an 8x8 or 9x9 inch baking dish with cooking spray.
Combine flour, cornmeal, sugar, baking powder and salt.
Stir in the milk, oil and beaten egg, mixing just until moistened. Let batter rest for 5 minutes.
Pour batter into prepared dish and bake for 20 to 25 minutes or until light golden brown.
Serve warm.
To make corn muffins:
Pour batter into 12 paper lined muffin cups. Bake for 15 to 20 minutes or until light golden brown.
